Yummy Homemade Hummus

I absolutely love hummus, enjoy making it as it’s so easy to make and healthy2015-02-25 17.10.15. To make the cooking process even easier, some people tend to use canned chickpeas but I prefer to use and cook the raw, dried ones. Takes additional time but that way, I know exactly what’s gone into it and it tastes much better!

Prep Time: 12 hours

Cooking Time: 1 hour 10 minutes

Ingredients

200g dried chickpeas (garbanzo beans)

2 tbsp. tahini

1 lemon

1 garlic clove

1/2 cup extra virgin olive oil

1 tsp. cumin

1/2 tsp. cayenne pepper

Handful of coriander (chopped)

Pinch of salt

Directions

  1. Place the chickpeas in a bowl and cover with cold water. Leave to soak overnight for 12 hours.
  2. Rinse and place in a saucepan with clean, cold water and salt, and boil for an hour or until soft enough
  3. Drain, saving the liquid and set aside to cool for 15 minutes
  4. Blitz the tahini, garlic and lemon first in the food processor for about 1 minute
  5. Add the chick peas to the mix and process adding some of the reserved liquid as you go along, until you get the desired consistency (you want to end up with a fairly smooth and creamy consistency)
  6. Add the olive oil, cumin and cayenne pepper, and mix thoroughly
  7. Transfer to a bowl, drizzle with a tablespoon of olive oil, dash of cayenne pepper and garnish with chopped coriander.
  8. Serve with vegetables and enjoy!
